Extending the hand of peace

I meant to post this over the weekend, but things just didn't work out. Whilst in Australia some weeks ago I was introduced to a new cocktail. You won't find this in any cocktail book, as it was invented by my good friend Heather in honour of her mother-in-law, Olive. It's called:

The Olive Branch

1 Measure Vodka
1 Measure Lime Syrup*
1/2 Measure Freshly Squeezed Lime Juice
1/4 Measure Pernod

Mix all the ingredients together over ice (I favour also keeping the vodka in the freezer, along with the gin). Strain into a Martini glass and serve. Simple.

The trick is in getting the balance between the sweetness of the syrup and the aniseed taste of the Pernod. Oddly enough, adding more vodka can help with this, but it makes for a more lethal concoction.

* don't buy nasty lime cordial for this - it's not the same. Make lime syrup by mixing a cup of sugar with a cup of water. Heat and stir until all the sugar is dissolved, then remove from the heat and add the juice and finely grated zest of a lime. Cool down and store in the fridge. This should make enough syrup for at least four cocktails.
